La región del cava : problemas espaciales de este espumoso y principales fases de su proceso de elaboración

El presente artículo sobre el cava plantea algunos de los problemas que ha suscitado la región (ámbito espacial) legalmente amparada para su elaboración. Por otra parte, el territorio tiene una enorme importancia, pues el vino base se obtiene de diversas variedades de uvas, que deberán tener una determinada localización espacial en función de sus específicas aptitudes fisiológicas, que están en estrecha relación con el medio físico. Se sigue con una síntesis del fascinante proceso de elaboración del cava (segunda fermentación, crianza sobre lías, degüelle, etc.), para terminar, con unas breves consideraciones sobre su consumo y algunos aspectos legales.
The present article about cava brings out some problems in it's production which have arisen related to the spanish law it is protected under. In addition to this debate of this controversial territorial área, it also gives US a brief review of the main stages in the complex manufacturing of this fizzy wine. It begins with the different varieties of grapes used in obtaining the base wine, and from it the fizzy wine. What follows is a brief introduction to the fascinating manufacturing process (second fermentation, maturing, etc.), to end with some notes on its consumption and legal considerations.
